For dinner tonight I pulled out a fun and easy recipe. This one hasn’t seen action in our house for a while. Over the years of cooking with children around you tend to get in a rut. Taco Soup is sure to pull you out of your cooking dinner funk and put a fiesta in your mouth.
What you will need:
1 pound of ground beef
1 small diced onion
1 can of kidney beans
1 can of whole kernel corn
1 can or bottle of taco sauce
1 large can of diced tomatoes
1 small can of diced green chilies
1 package of taco seasoning mix
¼ chopped fresh cilantro (optional)
1 pinch of dried ground hot peppers (optional)
Crushed tortilla chips (optional)
Sour cream (optional)
Shredded cheese (optional)
Doing the deed:
In skillet brown ground beef with diced onions, drain off any grease. Add taco mix per stated on directions of package. In a large pot or crock pot dump in cooked seasoned ground beef, and the entire ingredient list above. In the crock pot go ahead and slow cook all day. On the stove this soup can be done in 45 minutes or less.
Serve with crushed tortilla chips sprinkled on top, shredded cheese and a dollop of sour cream. Salt and pepper to taste, enjoy.
