That is right, cheese-ball. This is one nummer treat for parties and holidays. I will warn you up front, the damn thing is addicting! You have been warned.
What you will need:
2 packages (8 oz each) cream cheese
3/4 c. crumbled blue(4 oz)
1c. shredded sharp Cheddar cheese (4 oz)
1 small onion, finely chopped (1/4 cup)
1T. Worcestershire sauce
1/2c. chopped fresh parsley
Doing the deed:
Place cheeses in medium bowl; let stand at room temperature about 30 minutes or until softened. Next beat onion and Worcestershire sauce into the cheeses with electric mixer on low speed until mixed. Beat on medium speed 1 to 2 minutes, scraping bowl frequently, until fluffy and creamy. Cover and refrigerate at least 8 hours until firm enough to shape into a ball. This is best done setting some of the cheese on plastic wrap. This way you can mold it without getting your hand covered, but you may want to get cheesy so you can lick it off. Completely up to you. Shape cheese mixture into 1 large ball. Roll in parsley; place on serving plate. I like to chop up an extra ¼ cup of dill to mix in with parsley to roll the cheese ball in. Cover and refrigerate about 2 hours or until firm. Serve with crackers and stand back because once people taste it, there will be cheese flying, so nummy. Happy Noshing!
