Years ago my grandma made this for my grandpa as a prank. Recently there was a picture online of this creative meatloaf and the memories came flooding back. Today was a meatloaf kind of day, don’t ask what the indicators are, trust me you don’t really want to know. A few of my kids are not all that jazzed about meatloaf, but I thought that if I pulled out grandma’s old trick it might peek their interest. Proud to say now all of the kids enjoy meatloaf.
Here is how to do the deed:
Once you mix your meat, seasoning and such, instead of pulling out the normal pan get out your cake pans. This can be done with a flat sheet or 2 round, I went with the round. Put your mixture in the pans and bake in the oven as normal. Make some mashed potatoes, homemade work perfect when whipped in the mixer. Stir up your meatloaf sauce in a bowl. Here is the change up. When laying out dinner, think of building a cake. Either cut your sheet of meatloaf in half and layer or pop our your 2 rounds. Between the layers put your sauce and then frost with mashed potatoes. I made a piping bag and piped some potatoes on top and around the base. Serve gravy on the side to pour over. Enjoy a old spin/maybe new to you, on everyday meatloaf. Normal food can be funky if you get creative 😉
