There are 3 ways to make this cornbread muffin mix, which ever way you pick you can make most of the mix and store in bags for the pantry.
What you will need:
1/2c. yellow cornmeal
3T. white sugar
1T. baking powder
2T. vegetable oil
Bake at 400F for 15-20 minutes
*If you are wanting to make the mix and store in bags for use later, dump all dry ingredients in a bag and label as Cornbread. Next you would write the list of wet ingredients on the bag along with temp and baking time.
*If you want a more sweet type of cornbread add 1/2c. brown sugar to the mix.
*If you want a more filling cornbread add 1/2c. of canned, fresh or frozen corn to the mix.
Today I went with the base recipe, then added 1/2c. corn & 1/2c. brown sugar.
