Made this tonight and the kids loved it, Mexican Lasagna.
What you need:
2lbs. lean ground beef or turkey
1 can (16 oz) refried beans
1 packet of taco seasoning- or make your own
1 can (8oz) tomato sauce- or make your own
2c. shredded Monterey Jack cheese
12oz uncooked lasagna noodles
1 jar(16 oz) mild salsa- or make your own
Doing the deed:
Cook your noodles in a large pot for about 5 minutes, then rinse in cool water. Brown the beef/turkey then add in refried beans, tomato sauce & taco seasoning to the meat. Stir well to combine all. Adding onion, chiles & jalapenos is optional. Next spray a 13 x 9 inch pan with cooking spray. Lay noodles on the bottom, overlapping slightly. Add a layer of meat, then a sprinkle of cheese and repeat layers until all meat sauce is gone. Top with a layer of cheese and spread your salsa on top. Cover with foil and bake for an hour at 350 degrees F. Add a dollop of sour cream on top if you wish, then enjoy!
