Broccoli soufflé is a favorite of my family and to this day I am not entirely sure where it came from. All of my kids love this simple dish and I have to say, it is pretty damn hard for me to resist. So why try to? I don’t.
What you will need:
2 – 24oz tubs of small curd cottage cheese
2 large eggs
2 – 14oz bag of frozen broccoli spears
Half a large block of velveta cheese
Doing the deed:
Thaw and cut up broccoli. Dice Velveta into small cubes. Dump everything into a large casserole dish and mix thoroughly. Cover with foil and bake for 1.5 hours at 350 degrees Fahrenheit. Remove foil and bake for another 20 minutes. Enjoy, I know we will cause it is YUUUUUUUUUUUUUUUUUUUmmy!
