Roll it up in Chicken

The other night when I started cooking dinner I quickly realized it was a “chicken surprise” night. Most of you understand what I mean. You have no plan on what to do but just start mixing and tossing stuff together and hope for the best. I started with thawed chicken breast and then crawled into the freezer and fridge to see what I could pull out to go with chicken.
First I took a carving knife and sliced the breasts in half. This left me with 2 full size breasts to work with.
Next I pulled out some fresh spinach, feta cheese, shredded mozzarella cheese. Tossed in a little olive oil, salt and pepper.
On a plate I mixed some olive oil, rosemary & thyme to rub on the chicken breasts. After the rub I spooned on some of the spinach mixture.
Grabbed my trusty toothpicks. rolled up the chicken breasts and held them together with toothpicks. Put them in the oven to bake on 350 for almost an hour, covered.
Whipped up some mashed potatoes & chicken gravy as a side. This was pretty dang yummy if I do say so myself, and I guess I just did 🙂 Happy Noshing.
